(Condé Nast Traveler) Having grown up on a high-altitude farm in Peru’s Cusco region, Choqque has been studying the country’s 6,400 native potato varieties since his father showed him how to hand-pollinate in a bid to improve tuber genetics. “We had 380 types in our collection, entering them in competitions in hopes of winning a tractor,” he says.
